Flavour Mavens: The Heritage – April 24

The Heritage is currently renewing its menu, and a Vanilla Crème brûlée has been added to the offerings listed. FM took a chance on trying the dessert when recently denied her Chocolate Fudge Pudding as the oven had been switched off by an errant chef hoping for an early mark. (An addicted friend calls the saucy chocolate pudding ‘sex-in-a-ramekin’, which leads to all kind of lacivious invitations, double entendres, and suggestive spoon licking.)

The brûlée was almost as sexy. The satisfying crack of the caramel layer would have met with the approval of Amélie Poulain, though the toffee was a little thick in places. The custard was rich, creamy and not over-set. (Over-set regularly occurs with custard-based desserts and pannacottas here in Townsville – I suspect chefs throw in extra setting agents to counteract the melty effect of the tropical climate, but end up with rubbery results.) The $14.50 serving was trucker-sized rather than demonstrating Parisian restraint, and therefore is best shared à deux. Mystifyingly, the yummy custard was definitely citrus scented, although the menu touted ‘vanilla’, and the bemused wait staff had no explanation.
