Flavour Mavens: The Sweatshop – April 25

The Sweatshop’s recent acquisition of a deli cold case has the Flavour Mavens eagerly peering through the glass to see which new daily desserts resident baker Beck Allen has concocted. Former favourite, Pineapple & Ginger Cheesecake-in-a-jar, has just been outshone by the individual Pear & Almond Tart: crisp and light puff pastry with an almond meal filling, topped by perfectly caramelised sliced pears and a scattering of toasted almond slivers.

It’s fresh and fragrant, not too sweet, with contrasting textures giving great mouth feel. A bargain at $4, the only improvement possible would be to offer a creamy dollop of mascarpone on the side for an extra dollar.
